At San Polo, from the year 2000, the Fertonani Family initiated and follows the philosophy of natural production. At our Azienda, in fact, we do not use herbicidal chemicals while the grass is eliminated using traditional mechanical systems. We do not use chemical fertilizer, but only organic (we grow various plants such as "favino" and medical herbs between the rows of vines) Pesticidal treatments are effected only with copper sulphate and sulphur (the most ancient and natural products always used in viticulture). We apply the same concept in the cantina where we use no chemical detergents, but only boiling water at high pressure and citric acid (weak organic acid) with which to clean all our wine containers, while enzyme activated detergents are used to clean the actual cellar.
