Grape Varieties: Sangiovese 80% - Cabernet Souvignon 20%

Production zone: Montalcino (Si)

Harvest period: Sangiovese first days of October, Cabernet half October.

Vinification: In steel tanks with long maceration
(18-20 days), two repassing of must over the grape dreg
per day at 28/30° C.

Ageing: 18 months in french barriques (allier) with medium toast. (1/3 new, 1/3 one year, 1/3 two year)

Yearly production: 20.000 bottles of 0.75 lt.

Bottling: 18th June 2003

Colour: Intense rubin red.

Bouquet: Net, of great fineness and fullness.

Taste: Dry, warm, armonic and well structured.

Serving temperature: 18° C.

Roast meet, wild fowl and medium ageing cheese
