Vinification: In steel tanks with long maceration
(18-20 days), two repassing of must over the grape dreg
per day at 28/30° C.
Ageing: 18 months in french barriques
(allier) with medium toast. (1/3 new, 1/3 one year, 1/3 two year)
Yearly production: 20.000 bottles
of 0.75 lt.
