In the cellars of Poggio San Polo, vinification takes place in stainless steel tanks at a controlled and constant temperature of 30° C. Following the drawing of our wine from the tanks, it is immediately fed into wooden casks for ageing. According to the wine, we utilize 225-228-300 litre French barriques, tonneaux of 500 litres, or wooden oak barrels of 30 q.
Winemaking is overseen by Mauro Fertonani and Luca Dattoma who presides over the production of several other leading estates.
